We’ve been working hard to extend the garden as long as possible, but we still ended up with lots of green tomatoes so last week I made fresh green tomato salsa.

Seems everyone I know was having problems with their tomatoes cracking this year. Still taste great though. I just chopped the tops off. They looked so pretty on the cutting board – like a work of art.

My first batch of red salsa was a bit mild, so I tried to spice this one up just a bit with a combination of fresh sweet peppers, jalapenos and canned green chilies.

INGREDIENTS:
- 16 Cups Tomatoes
- 4-5 Cups Onion
- 2 Cups Red Sweet Peppers
- 4 Jalapeno Peppers
- 1 Cup Fresh Cilantro
- 6 Cloves of Garlic
- 2 Cans of Green Chilies
- 1/2 cup Lime Juice
- 1/2 cup Lemon Juice
- 1 Tbsp Salt
- 1/2 Tbsp Pepper
- 2 Tbsp Cumin

Dice all ingredients and put into stock pot. Simmer uncovered 45 minutes to an hour.
Freeze, can or give some away to friends and enjoy!
